1/4 cup white wine vinegar
1 garlic clove, minced
1 tbsp Dijon mustard
1 tsp dried tarragon
1/2 tsp salt
1/4 tsp granulated sugar
1 cup extra-virgin olive oil
In a bowl, whisk vinegar with garlic, Dijon, tarragon, salt and sugar. Slowly whisk in oil until evenly mixed. Or in a food processor or blender, whirl vinegar with garlic, Dijon, seasonings and sugar until mixed. With motor running, gradually add oil. Taste and add more sugar if needed. Store, covered, or pour into a jar and seal. Dressing will keep well, refrigerated, up to 1 week. Whisk or shake dressing before using.
