Combine 1 cup long-grain rice, 2 cups water, 1 tsp vegetable oil and 1/2 tsp salt in a medium saucepan. Bring to a boil. Reduce heat to medium-low and simmer, covered, until liquid is absorbed, 15 to 20 min. Stir in 1/3 cup chopped cilantro, 1 sliced green onion and 1 tbsp grated lime zest.
