Caraway cheddar-cheese spread

- 125 g light or regular cream cheese , at room temperature
- 3 tbsp port , or dry sherry
- 1 tbsp finely chopped green onion
- 1/4 tsp caraway seeds
- pinch of black pepper
- 2 cups finely grated old cheddar
- Stir cream cheese with port. Then, stir in remaining ingredients. Serve with pumpernickel squares or crackers. Covered and refrigerated, spread will keep for 1 week.
