Beet and carrot salad

Ingredients

  • 2 beets
  • 1 large carrot
  • 2 tbsp red wine vinegar
  • 2 tsp olive oil
  • 1/8 tsp salt
  • 1/8 tsp pepper

Instructions

  • PEEL and coarsely grate beets and carrot into a bowl.
  • WHISK red-wine vinegar with olive oil, salt and pepper in a separate bowl. Drizzle over beet mixture and stir to coat. Let stand 10 min before serving.
