Vanilla bean syrup. (Photo, Sian Richards.)
It's a simple recipe, but latte lovers will swoon over this flavoured syrup. Repurpose glass bottles, seal them with fresh corks from a craft store and add a keepsake tag.
1 vanilla bean
1 cup granulated sugar, (203 g)
1 cup water
USE a sharp paring knife to slice vanilla bean in half lengthwise. Scrape out vanilla seeds.
COMBINE sugar with water, vanilla seeds and bean in a small saucepan. Boil, then reduce heat to medium. Gently boil for 5 min. Pour mixture into a glass jar. Keep vanilla bean in the syrup. Syrup keeps well, refrigerated, for up to 2 months.
