500 g ground beef
1 cup bottled antipasto sauce
2 plum tomatoes, finely chopped
2 green onions, thinly sliced
1 cup grated asiago or parmesan
4 hamburger or ciabatta buns, optional
Lightly coat a large frying pan with oil and set over medium-high heat. When hot, crumble in beef. Break it up with a fork. Add antipasto sauce, tomatoes and half of onions. Stir mixture frequently until no pink remains, 5 to 6 minutes.
Stir in half of cheese. Spoon over crusty buns and top with remaining onion and cheese. Or, for a lighter bite, spoon into Boston lettuce cups or romaine spears.
