1 to 1.5 kg pork back ribs
1/4 cup ketchup
1/4 cup soy sauce
1/4 cup maple syrup, honey or brown sugar
1 1/2 cups water
1/2 tsp hot-red-chili-flakes, optional
Cut ribs into serving-size sections, about 2 to 3 ribs. Combine ketchup, soy, maple syrup and water in a large saucepan. For a fiery taste, sprinkle in red pepper flakes
Add ribs and turn to coat with mixture. Bring to a boil over high heat. Then reduce heat to low, cover and simmer until fork tender, about 50 minutes.
Remove ribs. Increase heat to high and boil liquid, uncovered, until thickened like a barbecue sauce, from 20 to 25 minutes. Watch carefully to avoid burning.
Preheat broiler or barbecue to medium. Brushing with sauce several times, broil ribs on a rack about 4 inches (10 cm) under broiler or barbecue until hot and richly glazed, from 6 to 8 minutes per side.
