Italian sausages with sweet peppers and spaghetti

Ingredients

  • 6 bell peppers, preferably 3 red and 3 yellow

  • 2 tbsp olive oil

  • 1/2 red onion, cut into thin slices

  • 1/2 tsp hot red-chili flakes

  • 1 tbsp dried oregano leaves

  • 4 tbsp tomato paste

  • 3 hot or sweet Italian sausages

  • 2 tsp olive oil

  • 1 cup dry red wine

  • 1/2 cup water

  • 3/4 450-g pkg spaghetti pasta, cooked

  • sprinkling grated parmesan, optional

Instructions

  • Seed, then slice peppers into 1/2-inch (1-cm) strips. In a large, wide, deep saucepan, heat 2 tablespoons (30 mL) oil. Add peppers, onion, chili flakes and oregano. Stir often over medium heat for 5 minutes. Add tomato paste, stirring frequently until paste begins to darken, about 10 minutes.

  • Meanwhile, in a frying pan set over medium-high heat, cook sausages in 2 tsp (10 mL) oil until browned on all sides, about 5 minutes. Don't cook through. Slice into bite-size pieces.

  • Add meat to onion mixture once tomato paste has darkened, along with wine and water. Increase heat and simmer, uncovered and stirring often, until thick enough to coat spaghetti, from 15 to 20 minutes. Serve tossed with spaghetti and Parmesan, if using.
