Curried cherry chicken

Ingredients

  • vegetable oil

  • 4 skinless, boneless chicken breasts

  • 1 tbsp butter

  • 1/2 small red onion, thinly sliced

  • 1 1/2 cups pitted cherries, coarsely chopped

  • 1/2 cup chicken broth, or orange juice

  • 2 tbsp balsamic vinegar

  • 1 tsp curry powder

Instructions

  • Lightly coat a large frying pan with oil and set over medium heat. When hot, add chicken and cook until lightly golden and springy when pressed, 6 to 8 minutes per side. Remove to a platter or dinner plates.

  • Melt butter in pan. Add onion. Stir often until onion begins to soften, about 1 to 2 minutes. Add cherries, broth, vinegar and curry. Stir often, uncovered, until cherries are soft and sauce is thick and has reduced, about 5 minutes. Spoon over chicken.
