4 green onions
2 ripe tomatoes
500 g ground chicken, ground turkey or ground beef
4 garlic cloves, minced
1/2 tsp dried basil
1/2 tsp salt
1/3 cup creamy Caesar dressing
1/2 cup grated parmesan
1 pinch salt and pepper
2 romaine hearts, separated into leaves or shredded
Thinly slice green onions. Chop tomatoes. Lightly oil a large frying pan and set over medium-high heat. Crumble in chicken. Sprinkle with garlic, basil and salt. Using a fork, stir often to keep mixture crumbly until chicken is no longer pink, about 5 min.
Remove pan from heat. Stir in green onions, tomatoes, dressing and Parmesan. Taste and add salt and pepper, if needed. Place romaine leaves on plates and turn mixture overtop. Or spoon mixture over shredded lettuce.

Ground chicken and end-of-summer tomatoes are dynamite with creamy Caesar dressing and grated Parmesan. We spooned this mixture over crisp spears of romaine for a different take on Caesar salad. No lettuce? Use rice instead.
