Refrigerator beet pickles


Ingredients

  • 2/3 cup red-wine vinegar
  • 2 1/2 tsp granulated sugar
  • 1/4 tsp salt
  • 2 medium beets

Instructions

  • SHAKE red-wine vinegar with sugar and salt in a 500-mL jar until sugar dissolves.
  • ADD beets, peeled and very thinly sliced (use a vegetable peeler or mandoline).
  • REFRIGERATE 1 week before serving.
