1/3 cup water
1/3 cup brown sugar
1 tbsp Dijon mustard
1 tsp mustard seeds
1/8 tsp cayenne
3 apples, peeled, cored and cut 3/4-in. wedges (about 3 cups)
BOIL water and brown sugar with mustard, mustard seeds and cayenne in a medium saucepan over medium-high. Reduce heat to medium-low and simmer until syrupy, about 5 min.
ADD apples to syrup and simmer until apples are fork-tender and syrup is reduced, 15 to 20 more min. Serve cooled with a cheese platter.
