- Preheat oven to 400F (200C). Line a large, rimmed baking sheet with foil. Peel potatoes and cut into large bite-size chunks. Place on foil. Drizzle with oil and vinegar. Stir until evenly coated. Sprinkle with seasonings and stir to distribute. Roast, stirring halfway through, until potatoes are nearly tender, 40 to 45 min.
- Cut unpeeled pears in half and core. Slice each half into 4 wedges. Stir with nearly tender potatoes and continue roasting, stirring once, until pears are fork-tender, 10 to 15 more min. Stir in mint just before serving. Roasted sweet potatoes and pears are perfect with our Spicy Maple Rack of Pork or roast chicken.
