Sandwiches are the ultimate “to go” food, with endless variations. Instead of the usual mayo or Dijon spread, keep this feta pesto and the other spreads in this issue in your refrigerator. They’re great with roasted chicken, too!
Packed To Go
Cut sandwich into small bites and spear with toothpicks to hold together. Arrange in a single layer or in layers separated by waxed paper in plastic containers and seal.
Taste feta before using. If very salty, place in a colander and rinse under cold running water. Pat dry with paper towels.
