4 Italian sausages
2 red bell peppers
1 large tomato
1 onion
1 tbsp olive oil
Generous pinch salt
Generous pinch pepper
4 hot dog or focaccia buns
1 cup grated cheddar or Asiago or crumbled Stilton or goat cheese, optional
Lightly oil grill and heat barbecue to medium-high. Pierce sausages in several places with a fork. Place on grill. Barbecue with lid closed, turning occasionally, until lightly browned and cooked through, 10 to 12 minutes.
Meanwhile, seed peppers. Slice into quarters. Slice tomato and onion into thick rings. Brush all with oil and sprinkle with salt and pepper. Add peppers and onion to barbecue for last 6 to 8 minutes of sausage grilling. Turn often until peppers are lightly charred and grill marks form on onion. Add tomato for last 2 minutes of grilling. Remove to a cutting board as they are done. Slice peppers into strips. Coarsely chop onion and tomato. Tuck sausages into buns. Top with veggies and cheese.
