Napa cabbage, sesame oil and rotisserie chicken adds flavour and protein to this salad.
½ cup mayonnaise
3 tbsp toasted sesame seeds, divided
4 tsp rice vinegar
2 tsp sesame oil
1 ½ tsp soy sauce
½ tsp brown sugar
8 cups thinly sliced napa cabbage, about ½ small cabbage
3 cups shredded rotisserie chicken, skin and bones removed
3 green onions, thinly sliced
1 English cucumber, thinly sliced into half moons
1 cup coarsely chopped cilantro
Thinly sliced fresh red chili, optional
Whisk mayo with 2 tbsp sesame seeds, vinegar, sesame oil, soy and brown sugar in a large bowl until smooth.
Add cabbage, chicken, green onions and cucumber to dressing. Toss to combine. Transfer to a platter. Sprinkle with cilantro, chili and remaining 1 tbsp sesame seeds.
