SQUEEZE out liquid from grated zucchini in a colander.
MELT butter in a large frying pan over medium. Add garlic and zucchini. Reduce heat to medium-low and cook, stirring often, until zucchini is very soft, 20 to 25 min. Stir in salt. Season with fresh pepper.
SPREAD mixture over toast. Top with a fried or poached egg.
