Zucchini toast

Ingredients

  • 3 - 4 zucchini , grated (4 cups)
  • 2 tbsp butter
  • 1 garlic clove , minced
  • 1/8 tsp salt
  • 1 egg , fried or poached

Instructions

  • SQUEEZE out liquid from grated zucchini in a colander.
  • MELT butter in a large frying pan over medium. Add garlic and zucchini. Reduce heat to medium-low and cook, stirring often, until zucchini is very soft, 20 to 25 min. Stir in salt. Season with fresh pepper.
  • SPREAD mixture over toast. Top with a fried or poached egg.
