Avocado-pesto 'pasta' salad

  • 3 zucchini
  • 1 avocado
  • 3 tbsp basil pesto
  • 2 tbsp lemon juice
  • 1 garlic clove
  • 1/4 tsp salt


  • GRATE zucchini into long strands with a grater or spiralizer. Spin in a salad spinner to drain excess liquid.
  • WHIRL avocado with pesto, lemon juice, garlic clove and salt until smooth. Toss with zucchini until coated.
