1/4 cup tahini
1/3 cup boiling water
1 tbsp lemon juice
1/4 tsp salt
1 small garlic clove, minced (optional)
3 large roasted beets
cilantro
parsley
1/2 lemon
WHISK tahini with boiling water, lemon juice, salt and garlic in a small bowl.
TOSS with roasted beets, peeled and cut into wedges.
SPRINKLE with cilantro or parsley.
SQUEEZE 1/2 lemon over beets.
