2 eggs
2/3 cup 35% cream
2/3 cup 2% milk
1/4 cup all-purpose flour
1/4 tsp baking powder
1/4 tsp salt
2 cups fresh corn kernels
1 thinly sliced green onion
fresh black pepper, to season
PREHEAT oven to 375F.
WHISK eggs with cream and milk in a large bowl until smooth.
STIR flour with baking powder and salt in a small bowl, then whisk into egg mixture. Stir in corn kernels and green onion. Season with fresh pepper. Pour into a buttered 8 × 8-in. baking dish.
BAKE until dark golden and puffy in the centre, about 40 min.
