Sweet corn pudding

  • 2 eggs
  • 2/3 cup 35% cream
  • 2/3 cup 2% milk
  • 1/4 cup all-purpose flour
  • 1/4 tsp baking powder
  • 1/4 tsp salt
  • 2 cups fresh corn kernels
  • 1 thinly sliced green onion
  • fresh black pepper , to season


  • PREHEAT oven to 375F.
  • WHISK eggs with cream and milk in a large bowl until smooth.
  • STIR flour with baking powder and salt in a small bowl, then whisk into egg mixture. Stir in corn kernels and green onion. Season with fresh pepper. Pour into a buttered 8 × 8-in. baking dish.
  • BAKE until dark golden and puffy in the centre, about 40 min.
