Roasted cauliflower mash

  • 4 peeled garlic cloves
  • 1 medium cauliflower , cut into florets
  • 1 tbsp olive oil
  • 1/4 tsp salt
  • 1/4 cup grated parmesan
  • 1 tbsp butter
  • 1/2 cup warm milk


  • TOSS garlic cloves and cauliflower with olive oil and salt. Spread out on a baking sheet and roast at 400F, stirring halfway through, until cauliflower is very tender, about 40 min.
  • TRANSFER to a food processor with parmesan and butter. Whirl, while pouring milk through the spout, until mixture is creamy.
