- PREHEAT oven to 400F.
- TOSS fresh corn kernels with cornstarch, then stir in cheddar, green onions, egg and salt. Season with fresh pepper.
- SCOOP 1/4-cup portions onto a parchment-lined baking sheet. Gently press down until they’re 3-in. wide and 1/4-in. thick.
- BAKE in top third of oven, flipping halfway through, until fritters are firm and golden on the bottom, about 20 min.
