Apple-celery-root slawBy Chatelaine
- 2 tbsp lemon juice
- 2 tbsp olive oil
- 1 tbsp finely chopped tarragon
- 1 tsp grainy mustard
- 1/2 tsp salt
- 2 apples , cored and cut into matchsticks
- 1/4 small celery root , cut into thin matchsticks
- 1/4 cup chopped, toasted walnuts
- fresh pepper , to season
- WHISK lemon juice and olive oil with tarragon, mustard and salt in a large bowl until combined.
- ADD apples, celery root, and walnuts. Toss to combine. Season slaw with fresh pepper.
