Mocha fool with crunchy amarettiBy Chatelaine
End brunch on a sweet note by swapping that second cup of java for a creamy mocha parfait.
- 2 cups 35% cream
- 1 tsp instant espresso powder
- 2 tsp cocoa powder
- 1/3 cup icing sugar
- 10 amaretti , about 1/4 cup, crumbled
- 1/4 cup dark shaved chocolate
- BEAT cream with instant espresso, cocoa powder and sugar in a medium bowl, using an electric mixer on medium, until stiff peaks form when beaters are lifted, about 2 min. Spoon mocha cream into 6 parfait glasses. Garnish with crumbled amaretti and chocolate shavings.
