Whisk tahini with icing sugar, water and vanilla in a medium bowl until blended.
Serve immediately or transfer to a clean glass jar, seal with lid and refrigerate up to 1 month. Bring to room temperature before serving.
Whisk in 3 tbsp sifted unsweetened cocoa powder, 2 tsp water and 1⁄2 tsp vanilla until blended. Makes 1 1⁄3 cups.
If tahini is too thick, add 1 tsp water.
