Ingredients

  • 1 cup all-purpose flour
  • 2 tsp baking powder
  • 1/2 cup brown sugar
  • 1/4 tsp cinnamon
  • 1/4 tsp salt
  • 3/4 cup raisins
  • 1/2 cup milk
  • 1 tsp vanilla
  • 3/4 cup brown sugar
  • 1/4 tsp nutmeg
  • 1/2 tsp cinnamon
  • 1/4 cup butter
  • 1 1/2 cups boiling water
  • 1/2 tsp vanilla

Instructions

  • Preheat oven to 375 F (190 C). Grease a 2.5-L (10-cup) round-bottomed baking dish. Combine flour, baking powder, 1/2 cup sugar, 1/4 teaspoon cinnamon, salt and raisins in a large bowl. Stir with fork. Using a spoon, stir in milk and 1 teaspoon vanilla. Spoon into prepared dish.
  • To make sauce, stir 3/4 cup sugar with spices. Add butter. Pour boiling water overtop. Stir until butter is melted. Stir in 1/2 teaspoon vanilla. Gently pour sauce over pudding. Do not stir.
  • Bake, uncovered, in centre of preheated oven for 30 to 35 minutes or until cake springs back when touched in centre. To give sauce a chance to thicken, let stand for about 10 minutes before serving.
