Amazingly, adding an egg-white coating to potatoes makes them bake up golden brown. They look as if they came straight out of the deep fryer, but are grease-free.

Ingredients

  • 3 large potatoes, preferably Yukon Gold

  • 1 egg white, see tip below

  • 1/2 tsp paprika

  • 1/2 tsp salt

Instructions

  • Preheat oven to 500F (260C). Lightly oil or spray a rimmed baking sheet with vegetable oil. Peel potatoes only if you wish. Cut potatoes in half lengthwise, then slice each half into 6 wedges.

  • In a large bowl, lightly whisk egg white with paprika and salt just until frothy. Add potatoes and toss to evenly coat. Drain off excess liquid, then spread potatoes out on baking sheet. Bake on bottom rack of preheated oven 15 minutes, then gently turn over and continue baking until golden, 10 to 15 more minutes. Remove from oven. Sprinkle with more salt, if needed. Tip

Coat fries with 1 to 2 tbsp (15 to 30 mL) olive oil instead of egg white, if you like.
