Ingredients

  • 2 85-g pkgs instant beef-flavoured ramen-noodle soup mix

  • 1 small red onion

  • 250 to 375 g beef, either inside round or top sirloin

  • 1/2 cup water

  • 2 tbsp oyster or soy sauce

  • 2 tsp hot chili-garlic sauce

  • 1 tsp dark sesame oil

  • 2 cups snow peas, trimmed

  • sliced green onion, optional

Instructions

  • Bring 4 cups (1 L) water to a boil. Remove seasoning mix from packages and set aside. Place noodles in a large bowl. Pour boiling water overtop. Soak until tender, about 3 min. Drain and set aside.

  • Meanwhile, thinly slice onion. Slice beef into thin bite-size strips. Coat a large frying pan with oil and set over medium-high heat. Add onion and beef. Stir-fry until onion starts to soften, about 3 min. Sprinkle in 1 packet seasoning mix. Stir to coat beef and onion. Add 1/2 cup (125 mL) water, soy, chili-garlic sauce and sesame oil. Stir often, uncovered, until slightly thickened, 3 to 4 min. Add snow peas and noodles. Cook until snow peas are tender-crisp and noodles are heated through, 2 to 4 min. Spoon into serving bowls, then sprinkle with green onion.
