Balsamic-Beef Stir-fry

Ingredients

  • 2 celery stalks

  • 1/2 red onion

  • 1 red or yellow bell pepper

  • 2 cups broccoli florets

  • 1 ripe but firm mango, optional

  • 250 g strip loin or top sirloin steak

  • 3 tbsp teriyaki sauce

  • 1 tbsp balsamic vinegar

  • 1 pinch ground pepper

  • 1 pinch cayenne pepper

Instructions

  • Thinly slice celery and onion. Cut pepper into thick strips. Prepare broccoli. Peel mango and slice fruit from stone. Cut into thick strips. Thinly slice beef.

  • Generously coat a large, wide frying pan or wok with vegetable oil and set over medium-high heat. When hot, add beef. Stir-fry until no pink remains, 1 to 2 min. Remove to a plate. Add vegetables, mango, teriyaki stir-fry sauce and balsamic vinegar. Stir-fry 5 min, then return beef to pan. Stir-fry until beef is warm, 3 to 5 min. Sprinkle with pepper and cayenne. Taste and add more seasonings if needed.
