Next-night beefy Spanish rice

Ingredients

  • 1 tsp vegetable oil

  • 3 cups Smartly Seasoned Beef, see tip below

  • 1/2 cup water

  • 796-mL can diced tomatoes, including juice

  • 1 tsp paprika or Italian seasoning

  • 1/4 tsp salt

  • 1 large green bell pepper, seeded and chopped

  • 1 cup uncooked long-grain rice

Instructions

  • Heat oil in a large saucepan set over medium-high heat. Crumble in beef mixture (see below). Stir occasionally until beef is browned and separated into small pieces, about 5 to 6 minutes.

  • Pour in water and tomatoes, including juice. Stir in paprika (or Italian seasoning), salt and chopped green pepper. Bring to a boil. Stir in rice, cover and reduce heat to low. Simmer 20 to 25 minutes.

Smartly seasoned beef

If you have not made our Smartly seasoned beef (also in the Recipe File), you may substitute 1 pound (500 g) ground lean beef mixed with 1 chopped onion, 1 minced garlic clove, 2 teaspoons (10 mL) dried parsley, 3/4 teaspoon (7 mL) Worcestershire sauce, dash of Tabasco and pinches of salt and pepper.
