Apple-rum "Mexican" crêpes

Ingredients

  • 4 to 5 medium apples

  • 1/4 cup maple syrup

  • 2 tbsp rum

  • 2 tbsp butter, preferably unsalted

  • 1 tsp freshly squeezed lemon juice

  • 1/2 tsp cinnamon

  • 1/3 cup sour cream, or plain yogurt

  • 4 10-in. flour tortillas

  • 1 tbsp melted butter

  • 1 tbsp granulated sugar

Instructions

  • Preheat oven to 375F (190C). Line a baking sheet with foil. Peel and core apples, then dice into 1/2-inch (1-cm) pieces. You should have about 4 cups (1 L). In a large non-stick frying pan set over high heat, stir maple syrup with rum, 2 tablespoons (30 mL) butter, lemon juice and cinnamon. Heat until mixture begins to bubble, about 1 to 2 minutes. Then add apples and cook, uncovered and stirring occasionally, until tender and most of liquid is evaporated, about 5 minutes. Add sour cream and stir gently for 1 minute.

  • Place tortillas on counter. Spoon an equal amount of apple filling, approximately 1 cup (250 mL), along bottom third of each tortilla. Fold bottom of tortilla up over filling just to cover it. Then fold right and left edges of tortilla over filling. Tightly roll until completely wrapped around filling. Place tortilla, seam-side down, on baking sheet. Repeat with remaining tortillas.

  • Lightly brush tortillas with melted butter. Sprinkle sugar overtop. Bake in centre of 375F (190C) oven until tortillas are crispy, from 20 to 25 minutes. Great served warm with maple-walnut ice cream.

Why fuss with crepes when handy tortilla wraps substitute perfectly? Using tortillas will save you a lot of time but give you a wrap loaded with the same appealing taste of home-made apple pie.
