Roasted plum tomatoes

Ingredients

  • 6 plum tomatoes

  • 1 tbsp olive oil

  • 1/8 tsp salt

Instructions

  • Preheat oven to 400F. Slice tomatoes in half lengthwise. Scoop out and discard seeds. Toss with oil and salt. Arrange cut-side up on a baking sheet.

  • Roast in centre of oven until tomatoes are tender, 30 min. Transfer to a rack to cool completely.
