Mango-Lentil Salad

Chatelaine Triple Tested

Mangoes are in season and stores are loaded with our favourite variety (Atulfos). Use them in this lettuce-less side salad, and pair with glazed salmon.

Ingredients

  • 540-mL can lentils, drained and rinsed

  • 1 mango, coarsely chopped

  • 1/2 red onion, coarsely chopped

  • 2 garlic cloves, minced

  • 1/2 tsp cinnamon

  • 1/2 tsp coriander

  • 1/4 cup lime juice

  • 2 tbsp chopped fresh cilantro leaves

Instructions

  • COMBINE lentils with mango, onion and garlic in a medium bowl. Sprinkle with cinnamon and coriander. Drizzle with lime juice and stir to combine. Stir in cilantro.

Nutrition (per serving)

Calories 162, Protein 10g, Carbohydrates 32g, Fat 1g, Fibre 6g, Sodium 243mg.

Serve with glazed grilled salmon.
