1 1/2 cups grated carrots
1/4 cup white vinegar
2 tbsp water
1 tbsp granulated sugar
1/8 tsp salt
PLACE carrots in a medium bowl. Boil vinegar with water, sugar and salt in a small saucepan until sugar is dissolved, 2 to 3 min. Pour vinegar mixture over carrots and let stand, stirring occasionally, 10 min. Use immediately or refrigerate, covered, until ready to serve.
