6 to 10 mint leaves
3/4 oz simple syrup
2 oz amber rum
1 oz lime juice
2 to 4 oz chilled soda water
slice of lime, to garnish
crushed ice
PUT mint leaves in a tall glass. Add simple syrup and use the back of a wooden spoon to muddle the mint with the syrup.
FILL the glass with crushed ice. Add rum and lime juice. Stir.
ADD chilled soda water. Garnish with a lime slice.
Simple syrup: Boil 1 cup sugar with 1 cup water in a small pot until sugar dissolves. Store in fridge up to two months.
Cocktail math: 1 oz = 2 tbsp.
