I’m a fairly recent beet fan; however, I can’t say I’ve made much time to cook with them. Beets always seem like such a pain in the butt to prepare and cook, don’t they? The peeling, the red stains, the roots, the dirt – I used to pass them by for easier-to-prepare vegetables, even though I have grown to love the taste of cooked beets.

Despite what its name suggests buckwheat does not actually belong to the grain family even though it’s often referred to as a grain by many. You may be surprised to know that buckwheat is actually considered a fruit seed related to rhubarb, making it gluten-free and a good alternative for those who cannot consume wheat products.

Along with green monsters, vegan overnight oats are one of my favourite go-to breakfasts. Both smoothies and overnight oats are ready in a flash, leaving you extra time to hit the snooze button or to sneak in a bit of exercise. Even better, there is absolutely zero preparation (or clean up) in the morning (yes, it’s even quicker than standing in a lineup for a muffin)!

A healthy alternative to crispy chicken fingers

Despite the fact that I eat a vegan diet, I’ve never been a big fan of tofu, until recently. My fear of the squishy white block only got stronger after my first attempt at making tofu years ago. I baked the tofu in a creamy almond butter sauce and instead of it getting crispy like I hoped, I was left with soft and squishy tofu with a spongy texture. I wasn’t very impressed nor was I motivated to make it again for a long time.
